LOW CARB CAULIFLOWER RICE TASTES LIKE FRIED RICE

Being on a High Fat Low Carb diet program can be challenging, yet rewarding. I’ve adapted to this Way of Eating and have determined I will not go back to the old habits that have contributed to my weight gain in the first place. This Low Carb Cauliflower Rice tastes like fried rice, so much so that I had to hide it from my husband so it wouldn’t get devoured!

Low Carb Cauliflower Rice Tastes Like Fried Rice

To make this low carb cauliflower rice, I adapted a recipe I’d seen on Pinterest and made it to my own liking. I am keeping my carbs below 30 grams a day so I opted not to include the onions or too many peppers so I could enjoy more of the cauliflower. However, feel free to add more veggies in your rice.

Ingredients:

1 head of cauliflower (2- 2 1/2 cups)

cooked meat of choice (I used ground turkey)

1 egg

1/4 c green pepper

1/8 c carrots

Soy sauce (to taste)

Wash and chop cauliflower into florets, then pulse in food processor until it resembles “rice.” Using a wok, spray with a bit of coconut oil and cook the veggies down a bit. Remove the veggies and spray a bit more coconut oil and scramble the egg. Add cooked meat, veggies and riced cauliflower and stir on medium high heat. Add soy sauce to taste. This was absolutely delicious! Makes 6 servings.

When I make my low carb cauliflower rice tastes like friend rice, I use a non stick pan. Though mine is similar to the first one listed below, I’m getting to be a big fan of the stone finished pans like the one on the right. The Calphalon pans in the center a some of the highest quality pans around.
