Being on any low carb or keto program as well as Skinny in a Bottle, can be a bit daunting with restrictions...until you know how to cleverly have food that is delicious, but still on protocol. This brings me to a Southern favorite...macaroni and cheese. This is excellent for either Phase 3 of Skinny in a Bottle or Keto.
Who doesn't absolutely LOVE macaroni and cheese? I have fallen in love with this meal. However, being on Skinny in a Bottle and Keto didn't permit me to have these items. In our Facebook Group, we try hard to bring excellent recipes and alternatives to the lifestyle that caused us to gain weight in the first place. Try making this amazing dish the next time you have a hankerin' for macaroni and cheese and you won't regret it!
- 1 head cauliflower
- 4 tbsp cream cheese
- 1 tbsp. mustard (any kind)
- 1 and 1/2 c. cheese (1/2 c. reserved for top)
- Splash of cream
- 1 tbsp. of sour cream
- 1 tbsp. of butter
- 1 egg
- garlic powder
- salt and pepper to taste
Chop the heads off the cauliflower and steam until soft but not mushy. Once soft drain and return to saucepan. Add cream cheese, cheese, butter, sour cream and cream and stir until incorporated. Add mustard, garlic powder, and salt pepper to taste. Add mixture to a baking dish, cover with remaining 1/2 c. cheese and top with pepper and bake for 10 minutes. Then raise the temp to broil and then broil until bubbly. This is so delicious!
